Lotus Leaf Tremella Osmanthus Soup
Overview
This is a dessert suitable for the whole family to enjoy in summer. Different from the lotus leaf porridge introduced online, this one does not use calorie-containing rice at all. It combines nutritious and appetizing Tremella fungus, osmanthus, lily, and wolfberry. Finally, it is wrapped in fragrant lotus leaves and eaten refrigerated. It tastes better!

Steps

Prepare the required ingredients first, soak and wash the white fungus, and soak the lotus leaves in warm water until soft.

The white fungus must be chopped into pieces, unless of course you really like to eat it. My family doesn't like the taste of white fungus very much, so I chopped it up. After a while, the white fungus gelled and melted into the soup, and it just tasted sweet. Chopped white fungus is also easier to cook.

In the summer, it takes at least one and a half hours to make a real Tremella dessert by yourself, with the help of a pressure cooker. This is not easy to cook, so it needs to be placed on the soup setting, which takes about 25 minutes.
-
When using a pressure cooker, I only put lily, white fungus and rock sugar. After the pot is out, I switch to a regular pot and add dried osmanthus. It is recommended to use ready-made osmanthus paste, which is not only sweeter but also has a more delicate taste. Even if dried osmanthus is cooked for a while, it will have an astringent taste. Look, the white fungus has turned into gel!
-
At this time, add large slices of lotus leaves. You don’t need to cut the lotus leaves into thin pieces. You just need to cook them for a while to let the fragrance and light green color of the lotus leaves enter the soup. Finally, throw them away. Then add the wolfberry and simmer over low heat for 5-7 minutes.

Does it take less time to make it successfully than lotus leaf porridge? Also sweeter? Because I used a pressure cooker, I saved a lot of time and effort. Now the dessert is still hot and bubbles are coming out. I put it in the refrigerator to chill. It is better to drink it cool!
