Black Truffle Oatmeal Cream Soup
Overview
Black truffles were not popular in my family, and most of the locally produced truffles were exported to Europe, so to me, truffles have always been a legend in French cuisine. Although I grew up in a place where truffles are produced, it is not surprising that few people really know how to cook truffles. Because a week ago, my father caught about half a catty of truffles and fried them with chili peppers. I cried. Just to make up for my lack of appreciation for truffles, I made this soup.

Heat a small amount of butter in a pan.

Add finely ground black truffle and stir-fry over low heat.

Add appropriate amount of oatmeal and stir-fry evenly.

Stir well, then add appropriate amount of water and stir thoroughly, pour in light cream and continue stirring.

I happened to have broth, so I added 80% broth and 20% water.

If you are adding water, add an appropriate amount of salt and pepper when the pot is about to start. I added this, Baicao salt.

Remove from the pot, garnish as desired, and enjoy.
