Crush the garlic, mince it into puree, saute it until fragrant and set aside. This is the garlic paste.

Buy and cut the beef at the market, put it in a bowl, add the Shacha sauce, MSG, sauteed garlic, celery beads, a little corn starch and water, mix well and marinate.

Mix well the marinated beef.

Wash the melon and cut it diagonally.

Mix the kway teow with soy sauce and fry until the color looks nice.

Heat oil in a hot pan and fry the kuey teow until both sides are crispy. It is best to use a frying pan to fry the kuey teow to maintain its integrity.

Arrange the fried rice noodles on a plate.

There is no need to wash the pan after frying the kway teow. Heat the oil and stir-fry the melange. Add boiling water and stir-fry a few times, then quickly stir-fry the melange until cooked. Add MSG and fish sauce.

Place the fried melange on top of the kway teow. Do not use the remaining soup from the fried melange, which will make the kway teow less crispy.

After frying the melon, wash the pot and heat the oil again.

After the oil is hot, add the marinated beef and stir-fry for a few times. Add boiling water to quickly stir-fry the beef, and finally add a little cornstarch water to make the soup stick a little. The beef cooks easily which keeps the beef more tender.
