Dried hairtail fish
Overview
For a person, sometimes a dish is no longer itself, it may be an emotion, an expression, or a complex. This dried hairtail fish has my childhood memories and the taste of my mother.

Wash the hairtail segments and drain the water with kitchen paper. Then add salt, light soy sauce, old wine, star anise, peppercorns, white vinegar, green onion segments, shredded ginger, and garlic in sequence and marinate for 3-4 hours.

Take out the marinated fish segments and place them on kitchen paper

After simply removing the juice, add it to the flour

All covered with a thin layer of powder.

Wash the pot, remove the water, add cooking oil, heat until 6-70% hot, then add the fish segments.

Flip carefully during this period, fry over medium or low heat for 3-5 minutes, until the skin is golden brown and ready to serve.
