  1. Use the back of a knife to scrape the pork belly and pork skin several times, cut it into 5 cm squares, tie it with cotton thread, and fry it briefly in overheated oil. The main thing is to stir out the excess fat from the pig skin and lard.

  2. In a casserole, heat the oiled pork belly with the skin side down. After the oil comes out, sauté the garlic cloves until fragrant.

  3. Then turn the pork belly over (pork skin side up), then add rock sugar, soy sauce, Shaoxing wine, water and sugar in sequence to make a marinade. The amount of marinade should at least just cover the meat.
