Overview
I have always been fond of the Cantonese snack crystal shrimp dumplings. This is the second time I have made it. I finally succeeded in trying it. I am so happy.

Add the flour and starch to boiling water and stir until there is no dry powder in the form of snowflakes. Cover and simmer for 5 minutes. Knead into a smooth dough while it is hot. Add a little oil and knead evenly. Cover with a damp cloth and let it rest for 20 minutes.

Take a small piece, roll it into a long strip, and cut it into small sections.

Use a knife to roll it into thin slices. I was not used to it at first, so I needed to figure it out and use more skill, but I succeeded in the end.

Put the filling into the dumpling skin.

Add the stuffing and shape into dumplings.

The dumplings are made, but the wrapping skills are not good enough, which makes me laugh.

After wrapping, put it into a steaming plate lined with white radish slices. Add water to the pot and bring to a boil. Add the wrapped dumplings and steam over high heat for 5 minutes. The steamed dumplings will be crystal clear, smooth and fragrant.
