Onion, ginger, finely chopped.

Blanch the shepherd's purse in boiling water (just a little while, don't blanch it for too long) and chop into fine pieces.

Add appropriate amounts of chopped green onions, ginger, peppercorns, cooking wine, salt, soy sauce, and chicken essence to the meat filling and stir well.

Don't squeeze the minced shepherd's purse too dry, add it to the meat filling and mix well.

Add fillings to each wonton wrapper and wrap into wontons.

Put the pot under boiling water (the water should be wider) and the wontons will be cooked when they float.
