Mix the weighed wheat flour, high-gluten flour, salt, sugar and milk powder evenly; stir and dissolve the yeast powder ➕ water; beat the eggs into egg liquid; heat the butter in the microwave until soft; prepare the water for kneading the dough.

Make a deep well in the middle of the flour, pour in the yeast liquid all at once, and stir until the flour fully absorbs the yeast liquid.

Then add the egg liquid and continue mixing.

Pour the water used for kneading into the flour several times and stir until it is fully absorbed by the flour.

Then add the softened butter, stir evenly, and knead into a basically non-stick dough in a basin.

Sprinkle dry wheat flour on the cutting board, knead it into a smooth dough, put it in a basin, cover it with a slightly damp cloth, and carry out the first fermentation: 1 hour.

After the first fermentation, the dough will have doubled in size. After pulling the dough apart, you can see obvious honeycomb pores.

Divide the large dough equally into 10 small pieces and let rest for 15 minutes.

After resting, shape the small dough into a small circle, cover with a slightly damp cloth, and ferment for the second time: 30 minutes.

After the second fermentation, the size of the small donuts also increased. At the same time, pour half a pot of water into the pot and heat it up.

After the water boils, put the dough into the strainer, immerse it in the hot water, and cook the front and back sides for 1 minute and 30 seconds each.

After cooking, take it out, drain and cool.

Preheat the oven to 200 degrees for 10 minutes. At the same time, beat another egg wash and brush it on the surface of the dough.

After the oven is preheated, pour 50 grams of water into the empty baking pan at the bottom (water bath method, except for the recipe), and place it on a baking sheet or grill with oven paper and dough. Oven temperature setting: 200 degrees, time: 15 minutes.
