Pork leg meat, the fat to lean ratio is about 2:8, minced into puree.

Add a little cooking wine, salt, ginger powder, and white pepper, and stir clockwise for at least 10 minutes until the meat paste becomes sticky.

Bring the hot water to a boil, then turn down the heat to keep it from boiling. Grab a ball of meat paste with your left hand and squeeze it into a ball with your tiger's mouth. Use a spoon to scoop it into the water with your right hand.

Make all the meatballs in turn and bring to a boil over medium heat.
