Overview

  1. Prepare materials

  2. Separate the egg yolks and egg whites, add milk, cornstarch, and salt to the egg whites and stir evenly.

  3. Leave the oil in the wok and sauté the chopped green onions until fragrant.

  4. Add green beans, diced ham and diced carrots, stir-fry until cooked and set aside.

  5. Heat up another wok, add the reserved oil and heat until it is 50% hot.

  6. Add the prepared milk slurry and stir-fry in one direction over low heat until the milk and protein mixture condenses into a cotton-like consistency. Stir-fry until solidified, then add the various dices that were fried before.
