Overview

The weather is so hot right now that I don’t want to eat anything. My husband spent the whole day fucking with mung bean water. He is not happy even if he doesn’t have a meal. Being a rice cook is a big challenge. If you don’t like it when it’s hot, just go for the cold one. The cold skin has vegetables, noodles, and is sour and spicy. You can still be full without eating rice. It’s really simple and fast to learn what the experts do without washing the noodles. However, the dough is really hot when it is steamed, and it is worth it to see your family enjoy eating it.

  1. Pour the flour into a larger basin, use chopsticks to stir while pouring in about 300 grams of cold boiled water, stir until there are no dry flour particles and it is very thick, and let it soak for a while. After about 40 minutes, pour water while stirring until there is a slowly flowing batter when poured with a spoon. (Stir as hard as possible when stirring)

  2. Boil water in a larger wok and prepare a basin of cold water, using a basin larger than the pizza pan. I use a pizza pan to steam the dough. Use a brush to brush a thin layer of cooking oil on the pan. Pour in a spoonful of batter, shake it left and right, and put it evenly into the pot of boiling water (it should float on the water, don't sink). Observe the uniformity of the lower crust. If it is too thin, add half a spoonful of batter. If it is too thick, reduce the batter for the next cold crust.

  3. Cover the pot and steam for 2 to 3 minutes until there are big bubbles in the middle of the dough. Take out the plate and put it into the prepared cold water basin to cool down. (It will float on the water if it is too cool. Try not to stick the cold skin to the water.) Use chopsticks to gently draw a circle around the cold skin. The cold skin will be easy to take out. Place the taken out cold skin on an oiled grate, and then brush some oil on the surface of the cold skin to prevent the next cold skin from overlapping and sticking.

  4. Cut the steamed dough into strips and grate the cucumber.

  5. Add a little bit of aniseed powder to the chili peppers and peppercorns and grind them into powder with a food processor. Put them in a high-temperature resistant container and pour hot oil until they are smoking to make spicy oil.

  6. Pound garlic cloves into garlic paste and add purified water to make garlic juice.

  7. Add the spicy oil garlic juice and appropriate amount of salt, white vinegar, sugar and MSG into the cold cucumbers and mix them evenly. The sour and delicious cold skin is ready.
