My husband likes to eat it, so he always buys some and freezes it every year. When he's craving for it, he takes it out and stir-fries it. No matter how much you have, you can never have too much!

After buying the cicada monkey, soak it in salt water for 1 hour, change the water and wash it several times.

Put oil in the pot, stir-fry chopped green onions, dried chili peppers, and peppercorns, stir-fry until fragrant, then add the drained cicadas.

Reduce the heat to low and stir-fry continuously until the skin of the cicada monkey becomes darker in color. Sprinkle an appropriate amount of salt and serve
