Peel the winter melon and cut into thin slices.

Mince ginger, garlic, and chilli padi, slice into pieces and set aside.

Chop the minced meat into small pieces, add a little cornstarch and oyster sauce, mix well and set aside.

Heat the oil in the pot to about 80°, put the ginger, garlic and chili into the pot until fragrant, add minced meat, and stir-fry over high heat until fragrant.

Then add the winter melon to the pot and stir-fry, add a little salt and water, cover the pot and simmer for 1 minute.

Continue to stir-fry, add a little water and continue to simmer for 1 minute.

Boil the water, add a little soy sauce and stir-fry, then add a little water.

Simmer until the water dries up, about 2 minutes. Open the lid, add the chopped green onion, stir-fry evenly and serve.
