Amaranth Sauce Fried Noodles
Overview
My husband loves noodles of various flavors. As long as we have time, we will use the noodle machine to make more noodles, package them and freeze them. This time I used amaranth juice mixed dough, pink noodles, and the color is very charming.

Wash the red amaranth and remove the leaves.

Boil in boiling water for a while and let cool.

Knead the flour with a little salt and amaranth juice into a very hard dough.

Put into a pasta machine and press into thin slices.

Cut into strips as thick as you like.

Cool the cooked noodles under cold water, add a little blanched rapeseed, shredded egg skin, and fried sauce.

Put it in the pot and cook.
