Wash and cut into strips for later use

Mince the ginger and garlic, mince the meat, prepare Sichuan peppercorns, pepper segments, chili powder, and chop green onions

Pour a little oil into the pot, turn on low heat, stir-fry the chili segments and Sichuan pepper until fragrant, set aside

Pour an appropriate amount of oil into the pot again and heat it to 70% heat. Stir-fry the minced meat until it changes color. Add half of the minced ginger and minced garlic and stir-fry until fragrant. Add a teaspoon of cooking wine

Add a teaspoon of bean paste and stir-fry until fragrant

Add a bowl of water, a teaspoon of dark soy sauce and pour into the prepared Qianzhang

Bring to a boil over high heat and simmer for five minutes. Add one-third teaspoon of chicken powder to taste

Put the cooked Qianzhang into a large bowl and add the chili powder and the other half of the minced garlic

Top with fried chili segments and Sichuan peppercorns

Sprinkle with chopped green onion

Pour an appropriate amount of base oil into the pan and heat it until it is 70% hot (about two teaspoons)
