Chop the fish head into small pieces, add appropriate amount of light soy sauce, salt and 1 spoon of cooking wine and marinate.

Add 70 grams of water, a little salt and light soy sauce to the flour to make a batter and set aside.

Add an appropriate amount of oil to the pan and heat it up. Cover the fish head with batter and fry until it turns color.

Assemble the fried fish head. Leave some base oil in the pan.

Add 1 tablespoon of oil, appropriate amount of light soy sauce and chicken powder, stir until foaming, then add about 50 ml of water and bring to a boil.

Mix 1 tablespoon of cornstarch with water and stir until thick.

Add the fish head and stir-fry evenly before turning off the heat.

Finished product is plated. Cut some shredded peppers and add them to finish.
