Exploded bread
Overview
My puff pastry bread is made in a relatively small size. For two children and one adult, they can just stuff it into their mouths and take a bite. The sweet and sour texture of the cherry jam mixes with the soft texture of the bread. It is quite good to pair it with a cup of coffee, milk tea or juice for breakfast or afternoon tea!

Steps
-
Preparation materials: 100 grams of milk, 250 grams of flour, one egg, 2 grams of sugar, 30 grams of butter, 15 grams of yeast, 3 grams, 70 grams of cranberries. Add milk, salt, eggs, sugar, flour, and yeast in sequence.
-
Start the dough kneading function, add butter and cranberries after the first program, and knead until the hand mold is pulled out.
-
Cover with plastic wrap and ferment the dough until it is 2.5 times in size and does not shrink back when you poke a hole with your finger.
-
Move the dough to the cutting board to deflate, then divide into equal-sized pieces, wrap in bean paste and cherry jam, and shape into balls.
-
Place the seam side down on a non-stick baking pan. Place the middle layer of the oven at 100 degrees for secondary fermentation. Put a small bowl of water in the oven. After 30 minutes, ferment until it doubles in size. Place the middle layer of the oven at 160 degrees for 15 minutes. Take it out and let it cool.
