Braised pork with bamboo shoots
Overview
This dish is also a home-cooked dish from my hometown. Bamboo shoot casing is actually the tender shell wrapped around the tips of bamboo shoots. During the bamboo shoot season, we cook the bamboo shoots, separate the bamboo shoot tips, casings, and heads, and then ferment and dry them in the sun. The bamboo shoots are delicious and can be used to cook meat or steam chicken.

Boil the bamboo shoots overnight for 30 minutes and soak them in water. Rinse with clean water after the second day. If some are large, you can cut them into smaller pieces. Then drain the water and set aside.

Wash the pork belly, boil in water for 20 minutes, remove and slice.

First stir-fry the bamboo shoots in a pot to dry up the water, and then serve them up.

Then fry the meat in the pot until fragrant and remove the oil, add garlic, light soy sauce, southern milk, salt, and cook the meat until it changes color.

Then pour the bamboo shoots into the meat, stir-fry evenly, add a large bowl of water, cover and simmer for 20 minutes.
