Choose the beef, mine is a little gluteny, cut into finger-thick strips about five or six centimeters long, or you can slice it as you like. You can have as much beef as you like. I like to eat more at one time.

Boil cold water, blanch the beef, and then wash away the blood foam with cold water.

Heat oil in a pot, add part of the onion and ginger and stir-fry until fragrant, then add the blanched beef and stir-fry over high heat, add cooking wine (white wine or red wine can be used, the taste is better) and soy sauce and stir-fry until brown.

Add boiling water to cover the meat, add an appropriate amount of salt, more than usual for cooking, less will not taste good.

Add the prepared sauce and meat ingredients in advance. I mix them myself (onion, ginger, garlic, peppercorns, star anise, cinnamon, killer grass, etc.), or you can buy ready-made ones in the supermarket to save trouble.

Cook over medium heat until cooked for about 9 minutes, about half an hour to about 40 minutes. Stir-fry over high heat until the juice is dry. If it is not dry enough, you can put it in a microwave oven over high heat for about 3 minutes. After cooling, use it as a snack to relieve hunger and replenish energy.
