Steamed Egg Custard with Shrimp and Tofu
Overview
I think these three ingredients go well together when steamed together. They are delicious and nutritious, and are tender and smooth for digestion. They are especially suitable for the elderly and children. As soon as they were steamed, I ate them straight to the bottom of my pelvis. I wanted to leave half of them for my son, but then I thought about how old I am!

Prepare the ingredients; clean and peel the prawns and remove the shrimp lines, cut the fat tofu into small pieces, chop the green onion leaves and set aside;

Cut the tofu into a bowl, cover it with plastic wrap and refrigerate it for about an hour to allow the excess water to ooze out;

Add a little salt and white pepper to the shrimp and mix well, finally add a little starch, mix well and marinate for ten minutes and set aside;

Beat the eggs and add a few drops of lemon juice, add half as much water as the egg liquid and a little salt, and continue to mix evenly;

Filter out the foam in the egg liquid;

Take out the tofu and pour in the water seeping out of the tofu;

Pour the filtered egg liquid into the tofu;

Cover with plastic wrap and steam over medium-high heat for 20 minutes. Take it out,

Place the shrimps on the egg custard and continue to steam for five or six minutes;

Add the steamed fish soy sauce, sesame oil, and finally sprinkle with chopped green onion and it's ready to eat.
