Pork belly with barbecued pork sauce
Overview
My father, brother, and three younger sisters and I all like to eat pork belly, but because I didn’t like eating fatty meat before, I fell in love with pork belly since I ate it at a relative’s house. It’s bright in color, salty and sweet in taste, and soft in texture. It’s really delicious!

Wash the pork belly, scrape off the hair, and cut into pieces. Do not cut the skin into segments. Keep the skin intact.

Blanch the pork belly with ginger slices, wash twice with clean water, stir together all the seasonings, and marinate for 40 minutes.

Heat oil in the wok, add pork belly and fry until 2 sides are golden brown. Only add the pork belly and leave out the sauce for seasoning.

Stir-fry until both sides of the pork belly are golden brown, add the previous sauce and appropriate amount of water, and simmer for 20 minutes.

Finally, pour the pork belly and sauce into the stew pot and simmer for 40 minutes.
