Lady's Kiss
Overview
I am very lucky to have entered the finals of the #ACA Baking Star Competition. First of all, I would like to thank all my friends who support and encourage my food world. With your support, I have reached this point! Thank you Food World! Thank you ACA! The theme of the finals is healthy 100% baking, which means that the entries must not only be delicious, but also healthier. In order to make baked goods that fit the theme, the first thing I made was this little refreshing cookie without butter: Lady's Kiss. The name is so strange. It is said that it originated in France. Because it looks more like lips asking for a kiss, it was given this name by the romantic French. This biscuit is also very simple to make. It does not require any molds. You only need a small baking spoon or a ball scoop to achieve the perfect shape. The original recipe used rapeseed oil, but I used olive oil. Although no butter is used, since almond flour is included in the recipe, this cookie tastes really delicious. The key is that it is very healthy and not burdensome to eat.

First mix the almond flour and cake flour evenly

Then add sugar and mix evenly. The original recipe used yellow sucrose, but I didn’t have it on hand so I used white sugar instead.

Add olive oil and rub evenly with your hands

Knead it by hand into loose sandy grains, add milk to adjust the dryness and humidity to facilitate shaping

This dough is very hard when mixed, and it needs to be pressed hard to form a ball

Just pinch it with your hands and it will fall apart again, and that’s it

Use 1/2 a small measuring spoon to shape. Put the mixed flour in and compact it, then push it out gently with your hands.

Preheat the oven to 170 degrees for about 10 minutes, then put it in the oven and bake it for 25 minutes with hot air circulation.

Melt the dark chocolate with warm water in a piping bag. After the biscuits are cool, squeeze them onto one, then press another one to make a chocolate filling. You can also use chocolate extrusion patterns to decorate the surface. Due to the production process, the pictures were taken in the kitchen. The kitchen is made of tinted glass, so the pictures have a slight color cast. You can see the product picture for the specific color. It was taken in a restaurant and the color is really natural.

Look at the finished biscuits. I didn’t put too much filling in the middle. If you like chocolate, you can add a little more. The biscuits have a relatively solid texture, are hard and crispy, and have a very fragrant taste.
