Take a piece of dried squid and soak it two days in advance until it becomes chewy. (I don’t have alkali at home, so I can only soak it in warm water, so it doesn’t make it very big, but it actually increases the chewiness of the squid)

Wash the soaked squid and cut it into uniform strips about 4 cm long and 0.8 cm wide.

Cut the onion into long slices, add it to the hot oil pan and stir-fry for a while, take it out and set aside

Leave some oil in the pot, sauté the onion, ginger and chili until fragrant. Pour in the squid strips and stir-fry for a while. Pour in the rice wine to remove the fishy smell. Then add light soy sauce (for freshness), dark soy sauce (for coloring) and sugar. Add a little water and cook for two to three minutes. Remove the lid, add onions and stir-fry until the juice is reduced.
