Remove the hair from the pig's trotters and chop into pieces for later use.

Prepare spices.

Boil the pig's trotters in a pot under cold water, add Sichuan peppercorns and ginger, boil the water for 15 minutes, remove the pig's trotters and wash them with warm water.

Put oil and rock sugar in the pot, stir-fry the sugar color over low heat until brown bubbles appear.

Pour in the pork trotters and stir-fry evenly.

Turn the pressure cooker, add water, braised soy sauce, light soy sauce, cooking wine, salt water and simmer over medium-low heat for 20 minutes.
