Blanch the freshly chopped pork chops in a pot of boiling water until the color changes, take them out and drain.

Put the base oil in the pot, then add the small ribs and stir-fry evenly.

Add cooking wine, light soy sauce, dark soy sauce, and vinegar in sequence, and stir-fry until evenly colored. Add rock sugar and stir-fry.

Add boiling water to the pot to cover the small rows, put 1 star anise, bring to a boil and turn to low heat.
