Wash the pork belly and louver knots and set aside.

Put the pork belly into a pot, add water, add two slices of ginger and bring to a boil over high heat. Turn to medium heat and cook for 8 minutes. Remove, wash and cut into pieces.

Heat oil in a hot pan, add pork belly and stir-fry until the oil comes out and the skin is slightly brown, then add ginger, green onion segments, star anise, bay leaves, and louver knots and continue stir-frying until the skin of the pork belly is golden.

Then pour in cooking wine, balsamic vinegar, dark soy sauce, light soy sauce, salt, and rock sugar and stir-fry evenly. Pour in 500 ml of boiling water, scallion knots, cover and cook over medium heat for 15 minutes. Uncover and remove the spices. Add chicken essence and salt and stir-fry over high heat until the juice is reduced.
