Overview

This is the first meat dish I learned. I used to have a friend who liked to make chicken wings. By chance, I tasted this dish. It was very homely, but very fragrant. I could not forget it for a long time after I went back, so I asked for advice on how to make it.   1. Wash and cut chicken wings into pieces

  2. Wash all the ingredients and prepare them for later use. Blanch the chicken wings in boiling water and rinse them with warm water.

  3. After the oil is hot, add onions, ginger, garlic, chicken wings, Sichuan peppercorns, star anise, cinnamon and dried chilies and stir-fry until fragrant (about one minute)

  4. Add cooking wine, dark soy sauce, light soy sauce, and white sugar in sequence, and continue to stir-fry (to prevent the pot from sticking, add 1 tablespoon of water) for 2 minutes.

  5. Add water until the chicken wings are covered, cover the pot, bring to a boil over high heat, then reduce to low heat and simmer for 15 minutes. Add the screw green pepper and 1 teaspoon of salt, cover the pot again, and after 15 minutes, turn to high heat to reduce the juice.
