Mushroom fried noodles

Wash and slice the mushrooms into thin slices and set aside.

Cut green scallions into sections, mince white scallions and garlic.

Blanch the noodles.

Remove and rinse with running water until cool.

Pour oil into the pot, heat over high heat, add mushrooms and stir-fry continuously.

Stir-fry until the water dries up and the surface is slightly charred, add the green onion and minced garlic and stir-fry until fragrant.

Add noodles.

Pour in soy sauce and stir-fry evenly with chopsticks.

Stir-fry until the water dries up, add the green onions and stir-fry for a few times before turning off the heat.

Remove from the pan and serve on a plate!
