Tear the enoki mushrooms into two small pieces as flat as possible, and remove the roots of the shepherd's purse, leaving only the leaves. Chop the carrots finely.

Grind a little sea salt and black peppercorns on the enoki mushrooms and marinate the enoki mushrooms for five minutes.

Put the carrot cubes and shepherd's purse leaves into a bowl, beat two eggs, add a little salt and five-spice powder and mix well.

Do not put oil in the pan first, fry the enoki mushrooms until they are wilted, then remove from the pan.

Put a little oil in the pot, fry the enoki mushrooms until they turn slightly yellow, pour in half of the egg liquid, spread the carrot cubes evenly and arrange the shepherd's purse leaves. Wait for the egg liquid to solidify and flip over, then fry briefly.
