Cold and Spicy Fungus
Overview
Sometimes when I go to a restaurant to eat, I always order this dish. Because I particularly like the spicy and sour taste, and I also like to eat fungus, I learned this dish myself and make porridge for breakfast. It is a delicious side dish.

Soften the dried fungus with water, remove the roots and wash

Add water to the pot and bring to a boil, add the fungus and blanch it. Do not cook for too long, only about two or three minutes.

Take out the fungus and soak it in cold water

Chop green onions and minced garlic and put them in a container

Add a tablespoon of light soy sauce, remember it must be light soy sauce, dark soy sauce will not taste good

Add one tablespoon of white vinegar. If you can tolerate sourness, you can add two tablespoons

Add sugar, appropriate amount

Salt, appropriate amount. If you are not sure, you can add less first. After the final mixing, you can add more if you feel it is light.

A little MSG or chicken essence

Add a spoonful of soybean paste, this is mainly used to enhance the flavor, not too much

Add two tablespoons of chili oil. If you like it spicy, you can add more

Dice the mustard and put it into a mixing bowl

Mix all ingredients evenly

Remove the fungus from the cold water, drain the water and pour it into a seasoning bowl

Cut the cucumber into thin strips, put it into a bowl and mix well

Pour in sesame oil and stir evenly

Dang dang dang, it’s done. The taste is just right. Now mix it and let it sit overnight for the flavor to develop. It will be just right as a side dish tomorrow morning. It's a pity that we don't have white sesame seeds at home, otherwise it would be more fragrant.
