Wash the pomfret, make two cuts on the back, rub salt all over the body, add ginger slices and marinate for 15 minutes

Dry the fish body and sprinkle with dry starch

Heat oil in a pan, add pomfret and fry over low heat until browned on both sides

In another pot, add onion, ginger and garlic and stir-fry until fragrant

Add fried pomfret

Add light soy sauce, pepper, water to cover half of the fish body and simmer over medium-low heat, turning once in the middle

Collect dry and serve on a plate
