Overview

Our snack is called Hele, which is a very auspicious name! It means harmony and joy. Zhengzhen Hele is made of noodles as thick as chopsticks. What I make at home is ordinary machine-made noodles. So I also call it meatball noodles. The authentic Hele uses chicken broth, but because of bird flu, I switched to bone broth.

1. 1 Cut the eggs into eggshells (very thin ones for garnishing), slice the meatballs, chop the coriander, slice the sugar and garlic, set aside

   

2. 2 My homemade bone broth should actually use chicken broth. Because of the bird flu, I used bone broth and cooked the big stick bones in the soup pot all night

   

3. 3 After the noodles are cooked, add water, top with meatballs, candied garlic, egg skin, coriander, and pour bone broth. You're done! ! You can add vinegar or chili oil according to your own taste! ! ! !
