Material

Rinse the pot and add appropriate amount of water. Add chicken legs, ginger slices and scallions. Add another spoonful of cooking wine.

Bring to a boil and turn to medium heat for ten minutes. Turn off the heat, take out the chicken legs and pour them into cold boiled water to make the meat more elastic.

Take a small bowl, mince the ginger, garlic, and pepper and put it into the bowl. Add a spoonful of soy sauce and a pinch of salt. Add two tablespoons of hot oil and mix well. Set aside.
