Prepare materials.

Cut the lean meat into thin slices and marinate with appropriate amount of salt and oil for 10 minutes.

Peel and cut the spring bamboo shoots into pieces, put them in the pot and cook for a few minutes.

Slice the cooked spring bamboo shoots.

Cut the green pepper into small slices; cut the ginger into shreds.

Heat oil in a wok, sauté the ginger until fragrant, then add the lean meat and stir-fry until it changes color.

Add two large bowls of water, bring to a boil and skim off the foam.
