Tomato Bacon Focaccia
Overview
The savory focaccia, roasted sour cherry tomatoes and diced bacon are simply delicious. Focaccia is particularly suitable as a pizza base, especially if it is rolled out irregularly by hand into a large sheet.

Put all the ingredients into the bread machine and press two custom kneading doughs. After 25 minutes, grab a small piece of dough and pull it thin with both hands. If there are jagged cracks, add butter. Knead another custom kneading dough and a glove film will appear.

Ferment the dough until it doubles in size. When the sun is good, you can put it in a basin and cover it with plastic wrap to ferment in the sun. When the weather is bad, you can use the fermentation function of the bread machine

After the dough has fermented, divide each dough into 90g pieces. Then use a rolling pin to roll it into an oval shape and continue the second fermentation.

After fermentation, shape and press with hands to expel the air inside. Then add shredded mozzarella cheese, chopped bacon and cherry tomatoes

Bake in the oven at 235 degrees Celsius and 185 degrees Celsius, bake for 15 minutes. Turn the heat to 250 degrees and continue heating for 5 minutes. The tomatoes will be so smokey after they come out of the oven
