Cut the hairtail into sections, add a little ginger, onion, garlic, salt, squeeze in lemon juice, mix well and marinate.

Soak the vermicelli in warm water.

Chop ginger, onion, garlic, and pepper.

Cut cabbage into cubes.

Heat 50% of the oil in the pot, add the hairtail and fry over low heat until golden brown, remove and control the oil.

Leave the bottom oil in the pot and stir-fry the cabbage until it is broken and scooped up.

Heat oil and sauté ginger, onion and garlic until fragrant, add appropriate amount of water and bring to a boil over high heat.

Pour in the hairtail, cooking wine, soy sauce, rice vinegar and sugar, mix well and cook for two minutes.

Add vermicelli, chili pepper, and cabbage, stir-fry evenly, cook for one minute, finally add salt to taste, and reduce the juice over high heat.
