Herb Grilled Tofu Sandwich
Overview
Protein is indispensable for nourishing food and regulating the stomach in autumn. The best and most convenient source of vegetarian protein is tofu. Use traditional Chinese tofu and pair it with Western-style whole-wheat cereal staple bread to make a vegan sandwich. Even the sauce is a vegan sauce made with herbs, pine nuts and tomato sauce. Although it is vegetarian, the taste is rich and delicious! Having such a breakfast will satisfy the taste and nutrition, and you will be in a good mood all day——

Cut the northern tofu into two large pieces about 1cm thick;

Stack it up with kitchen paper at intervals and put it into a shallow plate; place a piece of kitchen paper on the bottom first;

Place another kind of kitchen paper on the top and press it with a heavy object (I use a shallow plate and add an appropriate amount of water to the shallow plate); this step is to squeeze out as much water as possible from the tofu to prepare for the next step;

Put 1 tablespoon of olive oil, half an amount of freshly squeezed lemon juice, 1 tablespoon of mirin (or cooking wine), 1 tablespoon of Japanese soy sauce (or umami soy sauce), 1 clove of minced garlic, three minced basil leaves (or a little dried basil), and a little pepper into a small bowl to make a marinade;

Add the marinade to the tofu, put it in a crisper, and marinate for more than 2 hours, or refrigerate overnight. If you eat it in the morning, complete this step in the evening.

Put the pine nuts into the pan and roast them over low heat; (If you use cooked pine nuts, this step can be omitted)

small handful of cooked pine nuts, 1 clove of garlic, 1 tablespoon of olive oil, a few basil leaves (or a little dried basil), 2 tablespoons of tomato paste, put them into the grinder of a blender;

Beat until smooth and thick, and set aside to form a sauce. (This step can also be completed in advance and stored in the refrigerator)

Wash and tear the lettuce into slices, drain the water and set aside; wash and cut the tomatoes into large pieces and set aside;

Whole wheat staple bread cut into large slices;

Brush the surface with a little olive oil and fry in a pan until golden brown on both sides;

Serve out and set aside;

Cut the onion into two large pieces;

Add a little olive oil to the pan and fry the onions until they are browned on both sides, remove and set aside;

In the same pot as the onions, add the marinated tofu and the marinated tofu soup, and slowly simmer over low heat;

Fry the tofu until the soup dries up, then fry the tofu until golden brown on both sides and turn over in the middle;

Take a piece of bread and spread it with herb sauce;

Place lettuce leaves and tomato slices on top;

Take a piece of tofu and add a piece of onion to the tofu;

Cover with another slice of bread smeared with sauce.
