Chop the large bones into small pieces, wash and set aside.

Bring the water to a boil, add the bones and cook until they change color, drain and set aside.

Wash and cut corn, kelp, and ginger and set aside,

Put the bones and kelp into the earthen pot, add an appropriate amount of water, bring to a boil over high heat and then reduce to low heat.

Cook over low heat for 40 minutes and then add cooking wine, salt and vinegar.
