Prepare the shrimp heads removed from other dishes

Shred the cucumber, cut the onion into sections, and slice the ginger

Put oil in the pot, heat it up to 40%, add the shrimp heads, fry over medium heat, press with a spatula to fully release the shrimp oil, and stir-fry the red oil. Then add the ginger and green onion and continue to stir-fry for a while

Pour in boiling water and cook the shrimp heads for 5 minutes, then use a slotted spoon to remove the shrimp heads, onion and ginger

Next, add salt, light soy sauce and chicken essence. After boiling the pot, cover and simmer over medium-low heat for 5 minutes
