Homemade fried rice with creamy mashed potatoes

I really didn’t know what to do, so I simply looked at the dining table and rummaged through the kitchen with some ingredients left over from cooking the day before. Ingredients for tonight’s cooking: Peel and wash potatoes and tomatoes. Microwave vegetables for one minute in advance to skim off the moisture. Since I was making two dishes, the ingredients were piled together and not separated. Please choose to ignore it.

Slice the potatoes and place them in a bowl in one layer, and sprinkle some salt and pepper on each layer.

After it's done, add the milk first, then the cream. (The milk and cream must roughly cover the potato slices. Increase or decrease the cream and milk as appropriate depending on the size of your potatoes)

Place the whole bowl in the microwave, power: 100. Microwave for 5 minutes. (The time may be increased or decreased depending on the power of your microwave oven.) During this period, please pay attention to prevent the milk from boiling and overflowing.

While the potatoes are heating, cook the rice.

Cut tomatoes, lunch meat, and mushrooms into 0.5 cm cubes and set aside.

Microwave the mixed vegetables for 1 minute in advance, remove the water, add the rice, diced luncheon meat, diced mushrooms, and diced tomatoes to a large bowl and stir evenly.

Heat the oil in a pot over high heat. When you see the oil steaming slightly and white smoke coming out, quickly pour the rice and other mixed ingredients into the pot.

Press down the mixed ingredients, turn to low heat and fry slowly. During this period, you can pick up the pot and shake it slightly to ensure even heating. Frying time is about 5 minutes.

After it is slightly colored, you can add some peppercorns, thyme, rosemary, etc. to season according to your personal taste. My son has a strong taste, so I added some cumin seeds to it.

The potatoes in the microwave should be ready at this time. After taking them out and crushing them, you can add some sugar to increase the sweetness according to your taste. My son likes the original milk fragrance, plus his teeth are decayed, so I didn’t add it.
