Spinach with Mushroom Sauce
Overview
For this dish, I stir-fried mushrooms with miso and simply mixed them with spinach. Office workers can also make it easily. I have introduced miso before, but I am afraid that new friends may not understand it. Miso is made from soybeans, fermented with salt and different kinds of koji. Miso is rich in protein, amino acids and dietary fiber, and regular consumption is very beneficial to health.

Prepare spinach and wash it.

Blanch the spinach and set aside.

The blanched spinach is neatly placed on the plate.

Cut various edible mushrooms into cubes separately and set aside.

Chop onions, ginger and garlic into mince pieces respectively. Put oil in a wok over low heat and sauté minced onions, ginger and garlic.

Add the diced edible mushrooms and stir-fry.

Prepare miso paste.

Add 2 tablespoons of miso paste and stir-fry, add a little salt.

Place the stir-fried sauce on top of the piled spinach and mix well when eating.
