For fish, remove the guts, fins and tail.

Split the fish head in the middle, cut the fish into sections, add cooking wine for a very fresh taste, crushed black pepper, and cornstarch, mix well and marinate for 15 minutes.

Peel tomatoes, cut into small cubes, set aside

Put a little more oil in the pot. When the oil is hot, add ginger slices and garlic slices. When the color changes, add chopped green onion.

Add diced tomatoes and stir-fry.

Fry the tomatoes into a paste and add boiling water or stock.

Add salt to taste, and after the water boils, add the fish head, cook for a few minutes, and then add the fish meat.

When the fish is almost cooked, add the vermicelli soaked in cold water and take it out of the pot. Do not cook it for too long, just one minute, otherwise it will become mushy.
