Hot black rice noodles
Overview
Hot black rice noodle cakes have the same color as black rice, but the texture is that of hot noodle, and it has the special aroma of black rice noodles.

Ingredients: flour, black rice noodles.

Turn on the heat and boil water in the pot.

Pour the boiling water into the flour basin and stir with chopsticks while adding water.

Stir until it becomes a wet powder.

Add the black rice flour and mix it with chopsticks first. The flour is still a little hot at this time, so be careful not to burn your hands.

Slowly knead the two kinds of flour into a dough. If it feels very sticky, you can add a little cooking oil to knead the dough, cover it with a damp cloth and let it rise for about 30 minutes.

Transfer the dough to the board.

Knead until smooth and divide into four equal parts.

Take one dough and roll it into a round shape and flatten it.

Use a rolling pin to roll the dough into a large round piece, and roll the other three dough into round pieces as above.

Pour cooking oil into the pot.

When the oil is 50% hot, put in a piece of cake. The surface of the cake will swell. Shake the pot and the noodles will move accordingly.

Flip and sear the other side. Remove when both sides are seared with a deep yellow color. The other three cakes are also baked in the same way.
