Heat the milk to 35 degrees, mix it with all the ingredients except butter and sesame seeds and knead it into a dough.

Knead for about 10 minutes. When the dough starts to get chewy, add melted butter at room temperature and knead together until a thin layer can be stretched without tearing. Knead the noodles into a small ball and let it rest for about 1 hour

Let the dough rise until 2.5 times in size. (The proofing temperature is best controlled at around 40 degrees.)

Take out the dough, remove the air, and cut into 12 equal portions. Let rise again for 45 minutes.

Let rise again until doubled in size.

Brush with egg wash and sprinkle with sesame seeds.

Preheat the oven to 180 degrees for 5 minutes and place on a baking sheet to heat. 180 degrees 18 minutes
