Cut the isinglass into small pieces and soak in cold water to soften. Cut the chiffon cake into 3 pieces, use a small flower pot to make three circles, and trim them into three large, medium and small pieces. It doesn’t matter if it’s not round, it doesn’t affect the appearance. (Figure 1)

Cut the chocolate into small pieces, add it to the milk, and heat over low heat until completely melted. (Figure 2)

Add softened isinglass flakes, stir until completely melted and then turn off the heat. (Figure 3)

Whip the light cream until it is 60 to 70% fluffy. (Figure 4)

Add 1/3 of the light cream to the chocolate paste, mix evenly. Add the mixed chocolate paste to the remaining whipping cream and mix evenly until it becomes thick. If it is too thin, the cake slices will float in the next step. (Figure 5)

Place a layer of cake slices, part of the mousse batter in a small flower pot, and finally put all the cake slices and chocolate mousse batter. (Figure 6)

Smooth it out with a spatula, knock the flower pot down a few times, cover it with plastic wrap, and refrigerate it for about 4 hours. 8. Sift in the cocoa powder and insert a mint plant.
