Cut four tomatoes into 1/4 pieces

Prepare the steak and pat the beef with the back of a knife until the meat is tender

Cut into pieces, marinate with cooking wine, barbecue sauce, and soy sauce, and leave for fifteen to twenty minutes

Cut potatoes into cubes and set aside

Pour oil into a hot pan, stir-fry green onions and ginger together, then add beef. When the beef changes color, add potatoes, stir-fry over high heat. When the stir-fry is half-cooked, turn off the heat and set aside.

Add tomatoes separately and stir-fry, add a little water and concentrated tomato paste, and then add sugar (I personally like to eat sweeter tomatoes, potatoes and beef, you can add more or less sugar according to your personal preference)

When the fried tomato pieces have turned into a paste, add the beef and potatoes and stir-fry together, over medium heat, add soy sauce, chicken essence, thirteen spices, cooking wine, salt, then cover the pot and simmer over low heat for half an hour. I will check it every ten minutes. If the pot needs to be dry, it is best to add boiling hot water to prevent the beef from becoming hard
