Laohuo Nourishing Soup

In the hot summer, if you have a bad appetite, it’s good to make yourself some nourishing Laohuo soup!

Wash the purchased bones and whole chicken feet.

Boil water in a pot, add bones and chicken feet to blanch the blood, remove and rinse.

Place in casserole.

Add ginger slices and appropriate amount of water.

Cover the lid, bring to a boil over high heat, skim off the foam, add the red dates, reduce the heat and simmer for an hour.

During this period, wash and peel the yam, cut into small pieces and set aside. (You can wear disposable gloves when peeling to avoid itching if your hands come into direct contact with the yams.)

After simmering for an hour, add the yam, bring to a boil over high heat, then lower the heat and simmer for another hour.

Before serving, add an appropriate amount of salt, turn up the heat and let the soup boil for a minute or two, then turn off the heat.
