Northeastern pancake box
Overview
Northeastern pancake boxes, with bean sprouts and chives vermicelli filling, which means "Ruyi" (the shape of the bean sprouts resembles "Ruyi") and "Long Time" (the homophone of "leeks"), is a very popular snack. There are different types of pancakes such as corn flour, rice flour, bean flour, etc., with corn flour being the main one. Foods from all over the world have similarities. The pancake boxes in the Northeast are actually very similar to Vietnamese spring rolls and Jiangnan spring rolls in terms of eating methods, except that the dough is different, the fillings inside are also different, and the size is much larger. Although the pancake box is not as exquisite as the spring rolls, it still has a strong home flavor.

Chop the soft boiled vermicelli into sections with a knife, wash the leeks and cut them into sections, beat the eggs and spread them into cakes and chop them into pieces, and dice the ham.
