Sweet Osmanthus Glutinous Rice and Lotus Root
Overview
I remember eating this dish for the first time when I went to Kunming in 2003. I ate it in other places on the way, but I will never forget the glutinous rice lotus root I ate in Kunming because it was made from sugared osmanthus. But I haven't done it until now.

Prepare materials. Peel and wash the lotus root, rinse the glutinous rice and drain the water.

Cut off the head of the lotus root and reserve it. Stuff the washed glutinous rice into the lotus root hole and use chopsticks to help fill it up.

Cover the cut lotus root head and secure it with toothpicks. Put it into a pressure cooker, add white sugar, water that just covers the lotus roots, red dates, and white sugar and cook for 30 minutes.

After the lotus roots are cool, cut into slices. Add sugar-osmanthus flowers to the lotus root boiling water, bring to a boil over high heat, simmer for a while, then pour it on the lotus root slices.
