Overview

I used to think that winter melon tastes best only when cooked in soup. Yesterday I saw some tofu soaks in the refrigerator. I suddenly thought that it would be delicious to bake some dried shrimps together with winter melon. Did it today and was not disappointed.

  1. Prepare the peeled and fleshed winter melon, wash and cut into pieces, wash and soak the dried shrimps for ten minutes, and cut the tofu into pieces. After the sea rice is soaked, take it out and keep the water.

  3. Blanch the tofu in water for half a minute. Put some salt in the water. After blanching, take it out and set aside.

  4. Pour an appropriate amount of oil into the pot, sauté the ginger and green onion, then add the dried shrimps and stir-fry.

  5. Pour in the winter melon and stir-fry, then add an appropriate amount of cooking wine and stir-fry evenly. Add 1 tablespoon of tomato paste and stir-fry evenly.

  6. Pour the water in which the sea rice is soaked, then add an appropriate amount of water until it is level with the winter melon. Add 1 teaspoon of sugar and a little salt, cover and simmer over medium heat.

  7. After the winter melon is cooked, pour in the tofu soak and cook for another minute to thicken the sauce and then serve.
